I just bought a MT 2500 with the hopes I can get it to work for 1 truck a 95 f350 with a 7.3 powerstroke. I need to know which cartridges. I need asap, the truck is down and I need to get it to run.

I bet we were running longer lead times in those days, and not getting new car info out as quickly. I bet you'd have to have cartridges 97 or newer to assure coverage. Also, as the updates came out, coverage for additional modules was added. So, get the newest cartridges you can find at a reasonable price.
Beware of the EBay guys that list new car coverage but are only selling OBDII coverage.
